
Za’atar salad with tofu (plant-based, gluten-free)
A bright, fresh salad to wake you up and liven up the rest of your day. Za'atar is a beautiful Middle Eastern spice that's a mix of sesame and green herbs. It gives a bit of a roasted pesto flavor to salad, flatbread, or any other dish that needs some earthy grounding. I tried it as part of my chef training last year, and now I love it!For today's inspiration, here is a quote by the poet Rumi. "Dance, when you're broken open. Dance, if you've torn the bandage off. Dance in the middle of the fighting. Dance in your blood. Dance when you're perfectly free."With pandemic restrictions easing up, I got to enjoy my first ecstatic dance this week in over 2 years! It was very healing and filled with so much energy and emotion.I wish you a beautiful day with lots of flavor dancing in your heart.


Ingredients
- 1 cucumber, chopped
- 2 tomatoes, chopped
- 1 small onion, chopped
- 1 package tofu, cubed
- 1 Tbsp olive oil
- 1 lemon, squeezed
- 1 Tbsp za'atar spice
- Fresh mint, parsley, basil, or other green herb leaves if you have them
- Salt and pepper to taste
Directions
- Add everything to a large bowl and toss it all together gently with two large spoons.
- Enjoy the gift of freshness and live, nourishing food!
