Orange Sesame Chicory Salad (plant-based, gluten-free)
Chicory is a bitter salad green, a bit like arugula. The sweetness of the orange and earthiness of the sesame and balsamic in this salad balance it nicely.It's great to have a variety of greens in your dietary routine. Give chicory a try and see if you like it!For today's inspiration, here is a quote about patience and perseverance from Canadian author Margaret Atwood:“Water does not resist. Water flows. - 1 bunch chicory, chopped into bite-sized pieces
- ½ tsp toasted sesame oil
- Juice of 1 orange
- 1 tsp extra virgin olive oil
- 1 Tbsp balsamic vinegar
- Salt and pepper to taste
- Put the chopped chicory into a large bowl.
- Add the dressing ingredients to the chicory and toss well to mix.
- Serve right away and enjoy as a side dish to whatever else is on the menu. 🙂
