Orange Sesame Chicory Salad

Chicory is a bitter salad green, a bit like arugula. The sweetness of the orange and earthiness of the sesame and balsamic in this salad balance it nicely.

It’s great to have a variety of greens in your dietary routine. Give chicory a try and see if you like it!


Ingredients

  • 1 bunch chicory, chopped into bite-sized pieces
  • 1/2 tsp toasted sesame oil
  • Juice of 1 orange
  • 1 tsp extra virgin olive oil
  • 1 Tbsp balsamic vinegar
  • Salt and pepper to taste

Directions

Put the chopped chicory into a large bowl.

Add the dressing ingredients to the chicory and toss well to mix.

Serve right away and enjoy as a side dish to whatever else is on the menu. 🙂
