
Chocolate Coconut Truffles (plant-based, gluten-free)
These chocolate coconut truffles are SO GOOD!!!! It’s hard to believe they’re plant-based (no butter, no refined sugar, no cream). You have to try them. Seriously. For today's inspiration, let us look to the poet Rumi:“Sorrow prepares you for joy. It violently sweeps everything out of your house, so that new joy can find space to enter. It shakes the yellow leaves from the bough of your heart, so that fresh, green leaves can grow in their place. It pulls up the rotten roots, so that new roots hidden beneath have room to grow. Whatever sorrow shakes from your heart, far better things will take their place.”I can relate to experiencing the greatest joys after the greatest difficulties have passed. Ingredients
- 1 ½ cups quick or rolled gluten-free oats
- ½ cup cocoa powder
- ¼ cup ground flax seeds
- Pinch of salt
- ½ cup vegan chocolate chips (optional)
- ½ cup coconut butter, softened
- ½ cup maple syrup
- 1 tsp vanilla
Directions
- In a medium bowl, mix the oats, cocoa, flax, salt, and chocolate chips together.
- In a small bowl, mix the coconut butter, maple syrup, and vanilla together. Pour this over the dry ingredients and mix it all up. Feel free to use your hands!
- Use your hands to press the amazingly delicious mixture into bite-sized balls. Savor at room temperature or store covered in the fridge or freezer.
