
Macro Bowl with Tahini Dressing (plant-based, gluten-free)
When I lived in California, I used to go to the Peninsula Macrobiotic Monday Gourmet Vegan Dinners, which went on every week for more than 20 years. A frequent culinary enjoyment there was the macro bowl or plate, with some kind of grain, some kind of bean, a variety of veggies, and a yummy dressing. The possibilities are infinite! Here’s one option.For today's inspiration, here is a timely quote from Dr. Jane Goodall:“WE CAN HAVE A WORLD OF PEACE. WE CAN MOVE TOWARD A WORLD WHERE WE LIVE IN HARMONY WITH NATURE. WHERE WE LIVE IN HARMONY WITH EACH OTHER. NO MATTER WHAT NATION WE COME FROM. NO MATTER WHAT OUR RELIGION. NO MATTER WHAT OUR CULTURE. THIS IS WHERE WE’RE MOVING TOWARDS.”May we find peace and harmony within ourselves so that we can share that gift with the world.


Ingredients
- 1 large beet, boiled until tender and peeled
- 1 cup cooked beans
- 1 cup cooked rice
- Handful of leaves from your favorite green plant
Dressing
- ¼ cup tahini
- ¼ cup olive oil
- 3 lemons, squeezed
- 1 Tbsp maple syrup
- 1 Tbsp garlic powder
- Salt and pepper to taste
Directions
- Mix all the dressing ingredients in a medium bowl and mix well.
- Arrange the beets, beans, greens, rice, and dressing on your plate however you like. Nutritious and delicious!
