Overnight Oats

If you want to give yourself the gift of a nourishing breakfast to wake up to with zero morning work, all you have to do is spend 5 minutes the night before putting 5 things into a jar. This is my new favorite snack!

You can also top your overnight oats with any fruit you have around the house – bananas, blueberries, sliced peaches. No need to cook anything, it just rests in the fridge overnight and it’s good to go the next day.


Ingredients

  • 1 medium bowl
  • 3 small jam jars, mugs, or covered containers
  • 1 1/2 cups soy milk (or other plant milk)
  • 1 cup gluten-free rolled oats (not quick oats)
  • 1/4 cup peanut butter (or any nut butter)
  • 1/4 cup raisins (or blueberries, or other fruit)
  • 1 Tbsp ground flax seeds
  • 1 tsp maple syrup (optional)
  • pinch of salt (optional)

Directions

In a medium bowl, mix all the ingredients together really well.

Divide evenly into 3 jam jars or covered containers, and put them in the fridge overnight. Don’t worry if there’s a lot of liquid – the oats will soak this up.

The next day, serve your overnight oats for breakfast or a snack, with whatever fruit you have on hand. I enjoy it with blueberries and bananas. No need to heat it up, just eat it as is anytime of day.

Flax seeds add a lovely flavor and nutrients, but you can leave it out if you don’t have it. I like to get whole flax seeds, grind them in a blender, and store them in the freezer.
