
Dad’s Porridge (plant-based, gluten-free)
Growing up, porridge was the one recipe I got from my amazing Dad. And the dad in our family now makes porridge for us too (as well as a lot of other yummy things!) It’s a super simple, comforting breakfast to start the day off on a nourishing foot. Especially helpful when someone in the family is having a hard time. I watched a wonderful talk this morning called "Taking Care of our Suffering" by Brother Dharma Embrace. He talked about the importance of suffering as a way of generating compassion – if we never suffered, we wouldn't be able to feel connected to or want to help others who are suffering. He also said that if you know how to suffer, taking gentle care of your anger, fear, or sadness, then you will suffer less. If we are all connected and taking care of our emotions, then we definitely all have days where we need a comforting bowl of Dad's porridge to restore our sense of peace and well-being.


Ingredients
- 1 ½ cups water
- ½ cup soy or other plant-based milk
- 1 cup rolled oats (gluten-free or regular)
- ½ cup raisins
- ½ tsp cinnamon
- ¼ tsp salt
- ½ tsp vanilla
- Coconut sugar or maple syrup to pour over the top (optional)
Directions
- Put the water, soy milk, oats, raisins, cinnamon, and salt in a medium pot over medium heat. Stir with a wooden spoon and bring to a boil.
- Once it starts to bubble, turn the heat down to low, stir well, and let it simmer for about 5-10 minutes until you get to your desired thickness. We like it pretty thick to hold our toppings.
- Remove the pot from the heat and stir in the vanilla.
- Serve in individual bowls and eat straight, or top with coconut sugar, maple syrup, or whatever milks, sweeteners, fruit, or nuts you like. ❤️
