Cozy Rice Pudding (plant-based, gluten-free)
- 2 cups cooked brown rice
- 2 cups soy milk or other plant-based milk
- ¼ tsp salt
- ⅔ cup raisins
- Maple syrup to pour on top (optional)
- Mix all the ingredients into a medium pot.
- Heat over medium high heat, stirring frequently, for about 15 minutes until it starts to get thick and creamy.
- Serve hot or cold. Enjoy!
